Single estate microlot coffee with peach & wine yeast co-fermentation by producer Jairo Arcila

Only the ripest cherries were harvested for this lot, which are transported to La Pradera processing center in grain pro bags or special tanks to preserve freshness. The cherries are floated in water tanks to remove low-density beans and foreign materials.
Then the cherries undergo a dry anaerobic fermentation process for 72 hours with the pulp
on. During this stage, peaches and wine yeast are added to the fermentation tanks. The
peaches transfer their distinct stone fruit like flavor to the coffee, while the wine yeast
enhances the fermentation process, producing aromatic compounds that add complexity and depth.
Wine yeast efficiently converts sugars into alcohol and other compounds during fermentation. This process breaks down mucilage more effectively, releasing organic acids that contribute to bright, crisp flavor.
Following fermentation, the cherries are pulped to remove outer skin while leaving mucilage intact. This sticky, honey-like layer defines the Honey process name and contributes to sweetness and body.
Beautifully aromatic with buttery peach, maple syrup and floral notes.
We have roasted this coffee to a light profile for soft brew methods.

Jairo Arcila is a third-generation coffee grower from Quindio, Colombia and is the Husband of Luz Helena whose coffee we also often showcase.
Jairo has received great advice and guidance from his sons who are now experts in producing Specialty Coffee. With their help, Jairo has greatly improved the picking, sorting, and processing of his coffees. His sons have also guided Jairo in the production of exotic varieties. He now grows varieties like Pink Bourbon, Java, Papayo ,and Gesha growing across his farms. The guidance from his sons has empowered Jairo and given him the tools needed to produce fantastic coffees with amazing flavour profiles.
Besides coffee, Jairo also grows other agricultural products on his farms such as mandarin, orange, plantain, and banana. Jairo enjoys starting the day with a really good breakfast! But most importantly, he enjoys spending time with his family.
