Dry fermentation for 24 hours then placed in Grainpro bags for 90 hours under specific conditions to achieve a higher concentration of lactic acid. Dried on beds to achieve 11% moisture content.
This microlot is 100% Java - originally from Ethiopia it is a mutation of the Typica variety. Seeds were taken to indonesia where it was named Java. It was introduced to Costa Rica in 2010 and then made its way over to Colombia.
A beautifully sweet coffee with balanced acidity and a pleasing mouth feel. Brewed on filter we enjoy flavour notes of strawberry jam, creamed honey and lime.
