The cup profile of Tabi is well-regarded, often featuring bright acidity, medium body, and complex flavour notes such as citrus, red fruits, and caramel, with a clean and balanced finish.
The Tabi variety was developed by Colombia's National Coffee Federation. This unique variety is a hybrid cross between the Timor Hybrid (known for its resistance to coffee leaf rust), Bourbon, and Typica. It was officially released in 2002, three years before the Castillo variety, as part of Colombia's efforts to improve coffee production and sustainability. Tabi was bred to combine the best traits of its parent varieties: high yields, strong resistance to coffee leaf rust, and an excellent cup profile. This genetic breadth lets it thrive in diverse growing conditions, making it a reliable choice for farmers.
Additionally, Tabi retains the traditional coffee flavours associated with Bourbon and Typica, which are highly prized in the specialty coffee market. It is part of the group of traditional varieties that smallholder farmers cultivate, and it has become increasingly popular across Colombia's coffee-growing regions, encouraged by its ability to produce high-quality coffee while reducing the need for chemical inputs, thanks to its natural resistance to leaf rust.
We have roasted this coffee to a medium/light profile for filter brewing.
Additional info about the Producer:
Jairo Arcila is a third-generation coffee grower from Quindio, Colombia and is the Husband of Luz Helena whose coffee we also often showcase.
Jairo has received great advice and guidance from his sons who are now experts in producing Specialty Coffee. With their help, Jairo has greatly improved the picking, sorting, and processing of his coffees. His sons have also guided Jairo in the production of exotic varieties. He now grows varieties like Pink Bourbon, Java, Papayo ,and Gesha growing across his farms. The guidance from his sons has empowered Jairo and given him the tools needed to produce fantastic coffees with amazing flavour profiles.
Besides coffee, Jairo also grows other agricultural products on his farms such as mandarin, orange, plantain, and banana. Jairo enjoys starting the day with a really good breakfast! But most importantly, he enjoys spending time with his family.
