The first coffee trees in Santa Clara were planted around 1900, and this tradition continues to this day. Now the third generation and fourth are fully dedicated to agriculture in the farm. The farm is managed by Moacyr Dias Pereira and his wife, Alayde Graciano Pereira, together with their four children, who are all married and earn their lively hoods from agricultural work.

They have improved their farming practices by adopting new techniques and technologies to produce the highest-quality coffees. The farm is in Conceição do Rio Verde, within the Mantiqueira de Minas. Our coffee is grown at elevations ranging from 930 to 1,050 m.a.s.l, across a total area of 350 hectares. The main varieties cultivated on the property are Bourbon, Acaiá, Red Catuaí, and Yellow Catuaí.

Harvesting is carried out on cloths to prevent the cherries from coming into contact with the soil, preserving quality. On the same day, the coffee is transported to the processing center,where it receives careful attention at every stage to ensure excellent results.

After processing, the coffee is dried on concrete patios under the sun and then finished with a final drying phase until it reaches the ideal moisture content of approximately 11%. The coffee is then placed in wooden bins to rest for a period of 30 days. Environmental preservation is a top priority at Santa Clara farm. They are deeply committed to protecting native forest areas and preserving water sources. All land is properly registered, and agricultural activities are carried out in compliance with environmental regulations.

We have roasted this coffee to a medium/light profile for filter brewing.
